This potato is sold by Nagomi no mori, a limited company in agricultural production, and as the name of their product suggests, ‘Whole Baked and Dried Sweet Potato Kan-kiwami’ is made using a specially selected sweet potato variety known as red skinned Haruka. This incredible dried potato packs quite a punch with its rich, thick umami (taste).
The high-quality variety of sweet potato known as red skinned Haruka is grown by the company itself in Sakura City, Tochigi Prefecture, and then allowed to age before it is baked. Bit by bit the potato’s skin is carefully peeled off, and then the whole potato is dried as it is as to finish it. A characteristic of the rich taste of this sweet potato is how the Haruka potato’s sweetness has been really drawn out, which is quite fitting considering the company’s name is Kan-kiwami (extreme sweetness), and this means that when you eat this product you will be left with a moist, soft, feeling on your tongue.
