On a national natural monument which since ancient times has only been able to reside in a part of Kumamoto and Fukuoka, Suizenji-nori (freshwater blue-green alga) is now designated as an endangered species. Suizenji-nori fine noodles (Somen) hakusui is made from high-quality flour and Suizenji-nori which have been kneaded together into noodles, so that people can enjoy Suizenji-nori easily.

As a result of the high water retention of Suizenji-nori, it is difficult to stretch it, and that gives it its characteristic springy food texture. In addition, the ingredient sacran, of which only a tiny amount can be extracted from Suizenji-nori, has a water-holding capacity which is full of body-friendly ingredients.

Noodle soup with Sacran, called Kohaku no Uta, is a noodle soup whose making was supervised by a Japanese chef who is a Suizenji-nori master. One aspect of sacran, its thickening, brings out the best of each ingredient used to make it in this salt based soup.
