It is a famous restaurant that was originally established in 1856 as a Chakaiseki (dishes coming before the tea ceremony) and Kyo-ryori (local cuisine of Kyoto) store. Since its founding, it has been based on an ideal of “pick locally and consume locally", they serve up cooking which makes use of the taste of various kinds of ingredients, including traditional Kyoto vegetables.
